Ingredients

120 g unsweetened (dark) chocolate, coarsely chopped
1/2 cup butter, unsalted 120 g
1 1/4 cup sugar 260 g
1/2 tbsp vanilla extract 8 mL
2 eggs size large
3/4 cup white flour (all purpose) 100 g
1/2 tbsp baking powder 4 g
1 pinch salt 0.1 g
1 cup walnuts, coarsely chopped 100 g
parchment paper
8 scoops vanilla ice cream [optional] 500 mL

Method

  1. Preheat the oven to 175ºC/350ºF. Butter and line with parchment paper an ovenproof dish.
  2. Coarsely chop the chocolate. Melt the butter in the upper part of a bain-marie, then add the chopped chocolate, stirring as it melts. Remove from the heat and beat in the sugar, vanilla, and eggs.
  3. In a bowl, sift together the flour, baking powder, and salt. Use a wooden spoon to incorporate the dry mixture into the chocolate mixture. Coarsely chop the nuts, then stir them into the mixture.
  4. Scoop the mixture into the prepared dish then bake about 20-25 min, or until the outside is cooked but the inside is still moist. Check with a toothpick or knife to see if it is cooked through. Let cool 1 hour before removing from the dish.
  5. Cut into square pieces and serve with vanilla ice cream (optional).

I made this without nuts, as I am not a fan of nuts in my chocolate. They were excellent. Very chewy, rich and chocolaty. Not so great if you don't have a sweet tooth and if you're watching your diet because it's impossible to eat just one. Crumbling them warm over a nice rich vanilla ice cream is heaven in a bowl.
