Ingredients

??? white flour (all purpose) ???
??? sugar ???
??? baking powder ???
??? apple juice ???
??? orange zest ???
??? butter, unsalted, melted ???
??? eggs size large, lightly beaten ???
??? walnuts, chopped ???
??? water, hot ???

Method

  1. Cut each cranberry in half with a paring knife and reserve.
  2. Preheat oven to 350° F. Grease loaf pan and line with waxed paper. Grease waxed paper.
  3. Mix flour, sugar and baking powder together in a large bowl. In a separate bowl, mix apple juice, grated orange peel, melted butter and beaten egg. Add to the flour mixture and stir until flour is combined. Add cranberries and walnuts to the bowl. Stir in the hot water. Place in prepared loaf pan and bake 1 hour and 10 minutes. Test by poking a toothpick into bread. Remove from pan when ready and cool on a wire rack.
