Ingredients

20 pitted dates, boiled and warm 1 cup
1 cup water, warm 250 mL
1 cup brown rice flour 170 g
1/4 cup tapioca flour/starch 35 g
1/4 cup almond meal 26 g
1/2 tbsp guar gum, or xanthan 6 g
1 tsp baking powder 3 g
1 tsp baking soda 3 g
1/4 cup margarine non-hydrogenated 60 g
1/2 cup sucanat 100 g
2 eggs size large
1 tsp vanilla extract 5 mL
1/2 cup walnuts, or other nuts, chopped 50 g
1/2 cup sucanat 100 g
4 tbsp creamy soy preparation for cooking, or unsweetened coconut milk 60 mL
2 tbsp margarine non-hydrogenated 30 g
3/4 cup grated coconut 60 g

Method

  1. Preheat the oven to 350°F (180°C).
  2. Combine the flours, guar gum or xanthan, baking powder, baking soda in a bowl. Keep aside.
  3. Beat the margarine, sugar, eggs and vanilla till you get a light batter. Add preparation 1 (dates in hot water) to the mixture.
  4. Stir in the dry ingredients. Mix well. Add the nuts and pour into a greased pan. Bake for about 30 minutes.
  5. In the meantime, put the ingredients of preparation 3 in a saucepan and cook for 3 minutes. Spread preparation 3 (the last four ingredients: raw sugar, creamy soy preparation, margarine and grated coconut) on the cake. Bake 5 to 10 minutes or until the coconut is golden brown. Chill.
