Since the ancient times, fennel has been eaten as a vegetable, a seasoning, or used for its medicinal characteristics. Its taste is similar to anise, but sweeter and milder. Fennel is rich in potassium, vitamine C and folic acid.

A mandolin will make slicing easier.
Remove the stalk and feathery leaves. Thinly slice with a mandolin, then place in a serving bowl.
Pour the classic vinaigrette over the fennel, then add salt and pepper to taste. Toss and serve immediately.

Weirdly good! I'll definitely make this again.
We enjoyed this salad. It was light and tasty. Next time I will put a little less vinegar (I found it a bit vinegary for my taste), and a little more mustard.
