Ingredients

1/2 tbsp monkfruit sugar substitute 6 g
1/2 cup coconut flour 55 g
1/8 tsp baking soda 0.2 g
1/8 tsp ground cinnamon 0.4 g
3 eggs size large
1/4 cup coconut oil 60 g
1/8 tsp lemon extract, or almond extract 0.63 mL

Method

  1. Preheat the oven to 175°C/350°F. Line a baking sheet with parchment paper.
  2. In a bowl, mix all the dry ingredients. Add the eggs, coconut oil and lemon (or almond) extract. Mix well.
  3. Arrange spoonfuls of cookie dough onto the baking sheet. Bake in the middle of the oven until they turn light brown around the edges, about 15 min. Let the cookies cool down on the sheet for 30 min.
  4. Serve.
