
People of my native Liguria are known for their extreme frugality and «Grandma Luigina» was no exception. Hence she developed a great number of recipes which are rich in taste but use only «poor» ingredients and very little fat. No butter is used in this cake aside from a very small amount to grease the baking dish.

I was a little worried because I am not too used to baking and it looked like there was not enough batter to fill the dish. However in the end it turned out just great.
Great as a last minute dessert idea since these are ingredients that we usually have available in our kitchen. One little change that I find made a huge difference was to cut the apple's into 16 pieces (instead of 8). This way you are less likely to find a huge 'dry cake' spot with no apples in it. I'm addicted to this cake!
This was awesome. I believe that people that write that there is not enough batter are missing the point: this is just a different apple cake, which happens to be very tasty while being also low-cal & low-fat. Kudos to grandma Luigina!
