??? amaretti (dry almond macaroons), crumbled [optional] ???

Method

Preparing the filling:

  1. Preheat the oven to 375°F (190°C).
  2. Mix the rhubarb, strawberries, sugar and flour in a bowl. Keep aside.
  3. Spread a 20x15 inch (51×38 cm) sheet of parchment paper on the work surface, sprinkle with flour. Roll the pastry dough into a 17-inch (43 cm) circle. Slide the parchment sheet onto a baking or pizza tray and trim the excess.
  4. Sprinkle crumbled cookies on the rolled-out pastry dough, leaving a 4-inch (10 cm) border around the edges.
  5. Spread the fruit filling on the cookies. Gently gather the edges of the pastry dough towards the centre. Folds will form naturally.
Preparing the crust:

  1. Beat the egg yolk and water in a small bowl. Brush the pastry dough with it and dust with sugar.
  2. Bake for 10 minutes, reduce the temperature to 350°F (180°C) and continue baking for about 45 minutes. Cool and brush with apple jelly.
